BUTTER HERB BAKED FISH 
1 lb. sole or perch fillets, thawed and drained
1/2 c. butter
2/3 c. crushed saltine crackers
1/4 c. grated Parmesan cheese
1/2 tsp. basil leaves
1/2 tsp. oregano leaves
1/2 tsp. salt
1/4 tsp. garlic powder

In a 9x13 inch baking dish, melt butter in a 350 degree oven, 5 to 7 minutes. In a 9-inch pie pan, combine rest of ingredients. Dip fish in butter and then in crumb mixture. Bake near center of oven 25 to 30 minutes or until fish is tender.
