SALMON OR TUNA SOUFFLE 
1 tall can salmon or 2 cans tuna
1/3 c. bread crumbs or matzo meal
1/3 c. sour cream
3/4 stick butter, melted
1/4 tsp. baking powder
2 tbsp. grated onion
3 lg. eggs, separated

Mash fish. Add butter, sour cream, baking powder, onions, crumbs and egg yolks. Mix well. Beat egg whites until stiff and fold in. Pour into well greased pan and bake 45 minutes or until top is brown. Cool a few minutes and cut.
