APPLE TURNOVERS 
CRUST:

5 c. flour
2 eggs
1 tsp. salt
1 c. warm milk
3/4 c. evaporated milk
2 c. + 2 tbsp. shortening
1 pkg. dry yeast

Soak yeast in warm milk, add eggs and evaporated milk. Mix shortening, flour and salt. Add to liquids. Mix to stiff dough and chill.

FILLING:

Cook together:

1 1/2 c. sugar
1 tbsp. cinnamon
1 tbsp. flour
1 tbsp. minute tapioca
1 doz. cooking apples (pared and sliced)

Cool slightly.

Sprinkle counter with 4 tablespoons flour and 1 tablespoon sugar. Roll out dough thin. Cut in 5 inch rounds. Place 1 tablespoon filling in center. Fold over and seal. (Can brush with milk or egg and sprinkle with cinnamon.) Bake at 350 degrees F. for 15-20 minutes.
