ZUCCHINI LASAGNA | |
1/2 lb. ground beef 1/3 c. onion, chopped 1 (15 oz.) can tomato sauce 1/2 tsp. salt 1/8 tsp. pepper 1/2 tsp. oregano 4 med. zucchini 1 c. cottage cheese 1 egg, beaten 2 tbsp. flour 1/4 lb. Mozzarella cheese, grated Brown ground beef and onion; add tomato sauce and spices. Cook slowly for 15 minutes. Wash squash and slice lengthwise. Combine cottage cheese, egg and flour; set aside. Parboil squash 3 minutes; drain. In buttered baking dish, alternate layers of meat, squash and cottage cheese mixture. Sprinkle grated cheese on top. Bake at 350 degrees 30 minutes. |
