ZUCCHINI LASAGNE | |
3 lbs. zucchini (about 4 med.) 4 tbsp. flour 2 c. cottage cheese (may use fat free) 1/4 c. Parmesan cheese 8 oz. Mozzarella cheese, shredded 2 c. spaghetti sauce Mix cottage cheese and Parmesan together. Scrub, slice and steam zucchini until almost done. Drain well. Place small amount of spaghetti sauce in bottom of 9x12 inch glass dish. Place half the zucchini with 2 tablespoons flour over this. Cover with half of cottage cheese and Parmesan mixture. Layer over this 1 cup spaghetti sauce. Then cover with half the shredded Mozzarella cheese. Start again with remaining zucchini and repeat as before. Bake in 400 degree oven for 20 minutes, reduce heat to 350 degrees about 1 hour. Let stand 10 minutes before serving. Serves 8. |
