ZUCCHINI LASAGNA | |
1/2 lb. ground beef 1/3 c. onion 1 (15 oz.) can tomato sauce 1/2 tsp. salt 1/2 tsp. oregano 1/4 tsp. basil 1/8 tsp. pepper 4 med. zucchini 1 c. (8 oz.) cream cottage cheese 1 egg 2 tbsp. flour 1 c. shredded part skim milk Mozzarella Cook beef, onion until tender, spoon off fat. Add sauce, spices, heat to boiling, reduce heat. Simmer 5 minutes. Preheat oven to 375 degrees. Slice zucchini in 1/4 inch thick slices. Mix cottage cheese and egg in small bowl. In bottom of 8x12 inch baking dish, arrange zucchini in a layer, sprinkle with tablespoon of flour, top with cottage cheese and half of meat mixture. Repeat zucchini, flour, cottage, meat layers. Sprinkle with shredded cheese. Bake 40 minutes or fork tender. Let stand 10 minutes, serve. 295 calories per serving. Serves 6. |
