BROCCOLI CASSEROLE 
2 (10 oz.) pkgs. chopped frozen broccoli or use fresh
1 sm. onion
2 tbsp. melted butter
1 (10 3/4 oz.) can cream of chicken soup
1/2 c. milk
1 (8 oz.) process American or similar type cheese, cubed
3 c. cooked rice

Cook broccoli and drain. Saute onion in butter. Add soup, milk and cheese. Stir constantly until cheese melts. Stir in rice and broccoli. Pour into 2 quart shallow casserole. Bake at 350 degrees for 30 minutes. serves 6 to 8.
