FLUFFY STRAWBERRY TAPIOCA 
1 1/2 c. water
1/4 c. quick-cooking tapioca
1 (10 oz.) pkg. frozen sweetened sliced strawberries
1 (1.4 oz.) envelope whipped topping mix

Combine water and tapioca in 1-quart microwave-safe mixing bowl. Microwave (high), uncovered, 3 to 3 1/2 minutes or until mixture boils and thickens.

Microwave (high) strawberries in package 1 to 1 1/2 minutes or until berries are loosened from package. Add frozen berries to hot tapioca. Stir occasionally until berries are thawed and tapioca cooled.

Prepare whipped topping mix as directed on package. Fold into tapioca. Refrigerate until served.

Since microwave ovens vary in power, you may need to adjust your cooking time.
