FRUIT TAPIOCA 
4 c. water
1/4 tsp. salt
1/2 c. sugar
1 tbsp. lemon juice
1/2 c. minute tapioca
1 can fruit

Combine everything but fruit and boil for 5 minutes. (Use fruit juice as part of liquid). Tapioca clears as it cools and thickens. Add fruit to hot pudding. Crushed pineapple and bananas are good, also fruit cocktail. Add Cool Whip, whipped cream or Half and Half when cool, optional.
