CLAM DIP 
2 cans minced clams with liquid
2 tbsp. lemon juice
1/4 lb. butter
1 minced onion
1 tsp. parsley
2 cloves garlic, minced
1 tsp. dried oregano
1/2 tsp. pepper
1/2 c. bread crumbs
Parmesan cheese

In a saucepan, simmer both cans of clams with the liquid of only 1 can with lemon juice for 15 minutes.

In another pan, melt butter and saute onions, parsley, garlic, oregano and pepper. Add clams and liquid. Then add bread crumbs. Stir-cook until liquid is absorbed. Put mixture in oven-proof shallow baking dish. Sprinkle with cheese, if desired. Bake in 350 degree oven, about 15 minutes or until bubbly.
