COUNTRY STEW 
2 1/2 c. chicken broth or canned broth
9 cloves garlic
1 lg. white onion, cut into 1 1/2 inch strips
1 lg. green pepper, cut into 1 1/2 inch strips
1 lg. red pepper, cut into 1 1/2 inch strips
3 Italian plum tomatoes or 1 lg. ripe tomato, cut into 1 1/2 inch strips
2 tsp. olive oil
1 tbsp. fresh lime juice
2 c. cooked orzo

In a medium stockpot, combine all ingredients, except orzo. Simmer 30-40 minutes or until vegetables are just barely tender. Divide orzo among individual soup bowls. Ladle stew over top. Makes 5 servings.
