CRACKED SUGAR COOKIES 
1 1/4 c. sugar
1 c. unsalted butter
3 lg. egg yolks
1 tsp. vanilla
2 1/2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. cream of tartar

Preheat oven to 350 degrees.

Cream sugar and butter until fluffy, 3 minutes. Beat in egg yolks and vanilla. Sift dry ingredients together. Add dry ingredients to batter in 4 additions, mixing well after each addition.

Roll dough into balls - walnut size. Place on cookie sheet 2 inches apart. Do not flatten. Bake for 11 minutes. Cool on a wire rack. Makes approximately 4 dozen.
