SALLEY'S OATMEAL BREAD | |
2 c. boiling water 1/2 c. molasses or 3 tbsp. sugar 2 tsp. salt 1/2 c. lukewarm water 4 1/2 c. flour 1 c. quick or regular oatmeal 1 tbsp. butter 1 pkg. yeast Put in large mixing bowl boiling water and oatmeal, stir thoroughly; let stand 1 hour. Add molasses or sugar, salt and butter. In small bowl, put lukewarm water and add yeast. When dissolved, add to the oatmeal. Stir in flour. Beat thoroughly. Let rise until double in bulk. Add enough additional flour to make the dough just firm enough to knead. Knead. Shape into loaves and put into buttered pans. Let rise until almost double. Bake at 350 degrees for about 50 minutes. Makes 2 nutty, delicious loaves. |
