TOFU LOAF 
2 tsp. oil
1/2 c. water
1/4 c. millet seeds
12 oz. tofu
1 egg
1 c. tomato juice
1 c. rolled oats
2 tbsp. sunflower seeds, ground
1 c. grated cheese
1/4 c. soy sauce
2 tsp. garlic powder
1/2 tsp. basil
1/2 tsp. thyme
1 carrot, grated
1/2 green or sweet red pepper
1 onion, chopped

Preheat oven to 350 degrees. Lightly oil a loaf pan and set aside. In saucepan, bring water to a boil. Add millet seeds, cover and cook for 15 minutes. Pour tofu in a blender. Add the egg and tomato juice. Pour into a bowl, fold in all other ingredients and stir. Spread in loaf pan and bake 45 minutes. Serves 4.
