NACHOS FRIJOLES 
6 c. tortilla chips
2 c. shredded cheddar cheese
Red refried beans
1 med. tomato, finely chopped
2 tbsp. minced onion

In a shallow baking dish or on a heat-proof platter, spread tortilla chips in overlapping layers. Sprinkle with cheese. Bake at 400 degrees for 5 minutes or until cheese melts. Top with red refried beans; sprinkle with tomato and onion. Makes 6-8 appetizer servings.

RED REFRIED BEANS:

Saute 1/2 pound ground beef and 1 cup finely chopped onion in 1 tablespoon oil. Add 1 2/3 cups drained, cooked red beans and 1/2 cup water. Simmer, covered, 30 minutes or until beans are soft and can be readily mashed.

Mash with slotted spoon or potato masher. Season with 2 tablespoons taco sauce; add salt to taste. Makes 2 cups.

TIP: To serve as main dish, prepare nacho frijoles on 4 oven-proof individual plates. Divide ingredients equally on each plate. Makes 4 servings.
