SPINACH & ARTICHOKE CASSEROLE 
2 (10 oz.) pkg. frozen chopped spinach
1/2 c. chopped onion
2 cans plain artichokes
1 pt. sour cream
1/2 c. Parmesan cheese
Salt & pepper

Cook and drain spinach. Saute onion in butter. Mix all ingredients. Pour into a casserole dish. Sprinkle additional Parmesan cheese on top. Bake 20 minutes at 350 degrees. 6-8 servings.
