TWO CORN CASSEROLE 
1/3 c. chopped onion
3/4 c. chopped mango
1 stick butter
1 can cream-style corn (including juice)
1 can regular kernel corn
1 box Jiffy corn muffin mix
3 eggs
4 oz. extra fine shredded Cheddar cheese

Mix together onion, mango and butter and brown in skillet, then add remaining ingredients. Mix well. Spray an oblong baking dish with Pam. Pour mixture into baking dish. Spread 4 ounces or more (whatever desired) to cover top of mixture.

Bake at 350°F for 1 hour.
