FRIED CHICKEN WITH A NEW TWIST 
2 1/2 to 3 lb. chicken, cut in serving pieces
1 c. packaged biscuit mix
1/2 c. finely chopped pecans
1 sm. can evaporated milk
1/2 c. melted butter
1 1/2 tsp. salt
1 tsp. paprika

Wash chicken, drain and pat dry. Combine biscuit mix, seasoning and chopped pecans. Dip chicken into evaporated milk, then coat well with biscuit mixture. Place in 9 by 13 inch baking dish. Pour melted butter over chicken. Bake, uncovered, in 350 degree oven for 30 minutes, than bake at 375 degrees for 30 minutes or until chicken is tender.
