SUMMER SQUASH CASSEROLE 
2 lb. squash, sliced or diced
1 chopped onion

Simmer until tender; drain well. Add: 1/2 pt. sour cream

Mix well. Mix 1/4 cup melted butter with 1 package Pepperidge Farm herb stuffing mix. Line sides and bottom of casserole dish (which has been greased) with 1/2 of this mixture. Add the other half to above ingredients and pour into lined casserole. Bake in 350 degree oven until bubbly.
