RUEBEN CASSEROLE | |
1 lb. can sauerkraut, drained 1 tsp. caraway seed 2 c. shredded Monterey Jack cheese 1/2 c. thousand island dressing 1/2 lb. thinly sliced cooked corned beef 4 slices rye bread, cut into 1/2" cubes 1/3 c. butter, melted 2 tbsp. chopped fresh parsley Heat oven to 375 degrees. In 8" square baking dish layer sauerkraut, caraway seed, 1 cup cheese, thousand island dressing, sliced corned beef and remaining cheese. Toss bread cubes with melted butter; sprinkle over top. Bake for 35 to 40 minutes or until heated through. Before serving, sprinkle with parsley. Yield: 6 (1 cup) servings. |
