HAM & CHEESE POCKETS 
1 pkg. (17 1/4 oz.) frozen puff pastry, thawed about 20 min.
Dijon-style mustard
6 oz. Swiss cheese, sliced, cut into strips
1 egg, beaten

Roll each sheet of puff pastry out to a 12 inch square on lightly floured pastry cloth. Cut into 9 (4 inch) squares. Repeat with remaining sheets of pastry. Spread each square with mustard, top with strip of cheese, place strip of ham over cheese. Fold squares in half, moisten edges and press with a fork to seal. Place pastries 2 inches apart on ungreased baking sheet. Brush lightly with egg. Pierce top of pastry with fork. Bake at 400 degrees until puffed and golden brown, 15 to 18 minutes. Serve hot.
