HERBED POTATO SALAD 
4 or 5 red boiling potatoes
1/2 c. celery, chopped
1 sm. sweet onion, chopped
1/4 c. chopped green pepper

HERB DRESSING:

1 tsp. honey
2 tbsp. apple cider vinegar
1 tbsp. lemon juice
1/2 c. safflower mayonnaise
1/4 c. yogurt
2 tbsp. chopped chives
2 tbsp. chopped parsley
1 lg. fresh basil leaf, minced fine
1 sprig fresh dill, minced fine
1 sprig fresh summer savory, minced fine
Freshly ground pepper, no salt

Boil potatoes in their jackets until they can be pierced easily with a fork. Cool slightly and dice, with skins on. Combine with other vegetables. Make dressing by dissolving honey in lemon juice and vinegar. Combine mayonnaise and yogurt and pour in honey and vinegar, stirring constantly. Add minced herbs and pepper. Pour dressing over potato mixture while potatoes are still warm. Mix thoroughly and chill in refrigerator for an hour or two. Garnish with ripe tomatoes and chopped chives.
