ZUCCHINI BROWNIES 
2 c. grated zucchini (skins also if tender)
2 c. sifted flour
1 1/4 c. sugar
3/4 tsp. salt
1 1/2 tsp. baking soda
1/2 c. cocoa
1/2 c. chopped nuts
2 tsp. vanilla
1/2 c. oil
2 beaten eggs

Cream sugar and beaten eggs. Add cocoa and oil, salt, vanilla and soda. Stir in flour. Add zucchini and nuts.

Mix well. Spread in 11x15 greased jelly roll pan. Bake 20 minutes at 350. Frost with favorite frosting and sprinkle with nuts - optional.

QUICK CHOCOLATE FROSTING:

2 c. powdered sugar
1/4 c. cocoa
Pinch of salt
1 egg
Black coffee to make right spreading mixture
1/4 c. butter
