CINNAMON ZUCCHINI BROWNIES 
1/3 c. oil or softened butter
1 c. brown sugar, packed
1 egg
1 1/2 tsp. vanilla
1 c. flour
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. baking powder
1/2 tsp. salt
1 c. shredded zucchini
1 c. chopped nutmeats

Mix the oil or butter and sugar until fluffy. Add the egg and vanilla and beat thoroughly. Stir in the dry ingredients; mix well. Add the zucchini and nuts, blending well. Pour the batter into a greased 9x9 inch pan. Bake at 350 degrees for 25 to 35 minutes. Cool before cutting into bars and serving.
