TARRAGON TOMATOES | |
2-8 ripe tomatoes, peeled & sliced 1/4 c. parsley, minced 1 clove garlic, crushed 1 tsp. salt 1 tsp. sugar 1/4 tsp. pepper 1/4 c. salad oil 2 tbsp. tarragon vinegar 2 tsp. prepared mustard Cut out stem of tomato and cut into 1/2 inch slices. Arrange in shallow serving dish. Combine other ingredients in a jar and shake well. Pour over tomatoes and let stand at room temperature at least 20 minutes. Chill leftovers. Serves 6-8. |
