1/4 c. self-rising flour 1 3/4 c. self-rising meal 1/8 tsp. baking powder 1/8 tsp. baking soda 1/4 c. onion, chopped 1 egg, slightly beaten 1 c. buttermilk 1 tbsp. sugar (optional) Sift together flour, meal, salt, baking powder and add sugar if used. Add onion, egg, and buttermilk. Mix thoroughly. Mixture will drop better if allowed to set for about 1/2 hour. Drop from tablespoon, or shape lightly by hand and drop, into hot cooking oil or fat, about medium heat. Cook until golden brown all over. Drain on absorbent paper towels. Serve with seafood. --To use plain flour and meal, add 1 teaspoon salt, 3 teaspoons baking powder, and 1 teaspoon baking soda. Also water may be used instead of part of the buttermilk - about 1/3 cup water. |
