CHEESE PINEAPPLE CARROT SALAD 
Dissolve 1 large package sugar-free lemon Jello in 1 cup boiling water. Add:

6 oz. pimento cheese spread
3/4 c. pineapple juice
1/2 c. salad dressing

Cool and add:

2 1/2 c. crushed pineapple
1 c. grated carrot

When set cut in squares and place on lettuce leaf. Top with mayonnaise and sprinkle with paprika.
