CARROT-RAISIN PINEAPPLE SALAD 
2 c. shredded carrots
1 c. unsweetened pineapple, drained
1 tbsp. raisins or dates
1 tbsp. chopped celery
1/4 c. buttermilk
6 Sweet 'n Low packets
1 tbsp. diet mayonnaise (optional)

Combine all ingredients. Makes six (1/2 cup) servings. For diabetics, 1 vegetable and 1 fruit exchange.
