CHEESE "PASTRIES" | |
4 c. flour 1/2 lb. melted shortening 1/3 c. ice water Salt to taste 1/2 tsp. sugar 1 egg 1 tsp. baking powder Sift flour, baking powder and sugar, add melted shortening and work with hands to mix. Add egg and water with salt and knead on floured board to a smooth dough. Let it rest for 15 minutes. FILLING: 1 hard boiled egg, cut in slices 1/4 lb. grated cheese 2 white onions, chopped 2 tbsp. raisins Fry onions until golden brown, add other ingredients and mix well. Divide dough into 12 little balls and roll out very thin on a floured board. Make circles even and in center of each put 2 tablespoons of filling, fold over and seal edges well. Fry in hot fat, spooning the fat over the empanada to brown well. While hot sprinkle with a little sugar, serve hot. |
