BETTER THAN POTATO SALAD 
1 c. Uncle Bens rice
2 c. sliced celery
4 hard-cooked eggs, chipped
4 tbsp. prepared mustard
1 cucumber, pared & diced
2 c. mayonnaise or salad dressing
1 med. onion, finely chopped
1/2 tsp. salt
8 radishes, sliced

Cook rice according to package directions. Transfer to large bowl, cover and chill. Add mayonnaise or salad dressing, celery, onion, mustard and salt to chilled rice; mix well. Cover and chill. Stir in remaining ingredients before serving. Makes 6 to 8 servings.
