COCONUT MACAROON PIE 
1 1/2 c. sugar
2 eggs
1/2 tsp. salt
1/2 c. soft butter
1/4 c. flour
1/2 c. milk
1 1/2 c. shredded coconut
1 (9 inch) unbaked pie shell

Combine sugar, eggs and salt; beat until lemon colored. Add butter and flour; blend well. Add milk and 1 cup coconut; pour into pie shell. Top with remaining coconut.

Bake in 300 degree oven until slightly brown. Reduce temperature to 275 degrees; bake until done.
