SWEET POTATO PIE 
3 med. lg. yams
1 stick butter
3 extra large eggs
1 tsp. vanilla extract
1 c. evaporated or your favorite milk
1/2 tsp. salt
Cinnamon and nutmeg
3/4 c. white sugar
1/2 c. brown sugar
Dash of ginger; optional

Bake potatoes in shallow pan until mushy. Remove, peel, and add all ingredients; mix until smooth. May have small lumps. These will become smooth during baking. Prepare crust.

Pour filling in crust and bake at 325 degrees until crust is golden brown and pie is set, approximately 45 minutes, depending on oven and altitude.
