GREEK MUSAKASA 
Green beans
2 lb. ground beef
1 can tomato sauce
Salt and pepper to taste
1/2 c. bread crumbs
1/4 lb. butter
4 tbsp. flour
1 can evaporated milk
4 or 5 beaten eggs
1/2 c. grated cheese
1/8 tsp. nutmeg
2 lb. onions

Brown the ground beef and chopped onions. Cook the beans. Place the beans, beef, tomato sauce, salt, pepper, and bread crumbs in a buttered casserole.

To make the roux melt the butter, stir in the flour, and cook for a few seconds on low heat, stirring constantly. Add the evaporated milk and cook until it is slightly thickened. Mix together the roux, eggs, cheese, and nutmeg and pour over the meat mixture. Bake at 350 degrees until golden brown.
