SICILIA MEATLOAF | |
2 eggs, beaten 3/4 c. bread crumbs 1/2 c. tomato juice 1/2 tsp. oregano 1/4 tsp. salt 1 clove garlic 2 lb. hamburger 8 slices ham 6 oz. Mozzarella shredded cheese 3 slices Velveeta cheese, halved diagonally 1 sm. onion 1 sm. can mushrooms (optional) Combine eggs, bread, juice, seasonings and hamburger. Mix well. On wax paper, pat meat to a 12x10 inch rectangle. Place ham slices on top of hamburger; grate Mozzarella and sprinkle on top of ham. Roll up pinwheel fashion and seal ends and side. Place in shallow baking pan and bake at 350 degrees for about 1 1/4 hours. Place cheese wedges over top for last 5 minutes. |
