HEAVENLY CORNISH HENS 
2 cornish hens, 1-1 1/2 lb.
2 tbsp. sherry or water
1 env. (2 3/8 oz.) seasoned cooking mix for chicken

Wash and split hens lengthwise. Remove backbones and discard. Pat dry. Brush both sides of halves with sherry. Coat with seasoned mix. Place halves bread- side down in baking pan with thickest sides toward outside edge of dish. Cover with waxed paper and cook on high (max power) 8-10 minutes. Turn hens over, recover. Cook on high 8-12 minutes or until fork tender (oven 400 degrees for 1 hour).
