DOUGH: 1 c. sugar 1/3 c. vegetable oil 3 lg. eggs Grated rind of 1 lemon 1/2 tsp. vanilla 3 c. flour 2 tsp. baking powder FILLING: 1 lb. cooked prunes, pitted and chopped 1/2 c. chopped walnuts 1 tbsp. lemon juice 1 tbsp. sugar Mix first 5 ingredients together in large bowl until well blended. Add flour and baking powder. Stir to form dough. Cover and chill for 3 hours. To make filling, mix all ingredients together. Preheat oven to 375 degrees. Form dough into ball. Cut ball in half. Roll out each half 1/8 inch thick on lightly floured board. Cut into 3-inch circles. Spoon 1 teaspoon filling in center of each circle. Pinch 3 sides toward middle, covering the filling and forming a triangle-shaped cookie. Place 1 inch apart on lightly oiled cookie sheets. Bake 12 to 15 minutes or until golden. Makes approximately 3 1/2 dozen. |
