1 c. vegetable oil
1 tsp. vanilla
2 eggs
2 c. sugar
salt
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
3 c. apples (diced)
nuts (optional)

Beat together vegetable oil, vanilla, eggs, and sugar. Sift together salt, flour, soda, and cinnamon. Add to first mixture. Fold in apples and bake 1 hour at 325°F.
