VEAL SCALLOPINI 
8 veal cutlets cut into 4 x 3 inch cubes
5 tbsp. fine bread crumbs
5 tbsp. grated Parmesan cheese
Dash of salt
1 lg. egg slightly beaten
3 tbsp. olive oil
1 (8 oz.) can tomato sauce

Pound veal paper thin mix bread crumbs, cheese and salt. Dip veal into egg and into crumbs. Cook in hot oil until well browned on both sides. Place in baking pan pour tomato sauce over meat. Cover and bake at 350 degrees for 1 hour. 8 servings.
