GINGER PECAN COOKIES | |
1 1/3 c. sifted all-purpose flour 1/2 tsp. baking soda 1/2 tsp. each of cinnamon, cloves & nutmeg 1 stick unsalted butter 1/2 c. sugar 1/2 c. packed dark brown sugar 1 egg 1/2 c. chopped pecans 1/2 c. chopped crystallized ginger In bowl combine flour, baking soda, cinnamon, cloves and nutmeg. Sift twice and set aside. In bowl of electric mixer, cream together butter, sugar and dark sugar. Beat at medium speed 4-5 minutes until light and fluffy. Add egg, a little at a time and then beat together another 3-4 minutes. Fold into flour mixture. Then add pecans and ginger. Using a teaspoon drop cookies 1 1/2 inches apart onto a well buttered baking sheet. Bake in a preheated 375 degree oven for 13-15 minutes until golden. Cool on wire rack. Yields 50-60 cookies. |
