ITALIAN BEAN SALAD 
1 c. green beans
2 tbsp. thinly sliced onion
1 tbsp. chopped fresh parsley
1 sm. garlic clove, minced
1 tsp. Dijon mustard
1 tbsp. Italian dressing
1 tsp. red wine vinegar
Salt and pepper to taste

Steam green beans until tender-crisp, about 4 minutes. In a medium plastic bowl with a tight fitting lid, combine beans with remaining ingredients and toss to coat. Refrigerate at least 1 hour or overnight. Makes 1 serving.
