ZUCCHINI LASAGNA | |
1 lb. ground beef 1/2 c. chopped onion 2 c. tomato sauce 1/2 tsp. oregano 1/2 tsp. basil Salt and pepper to taste 4 med. zucchini 1 (8 oz.) carton cottage cheese or Ricotta 1 egg 1/2 lb. grated Mozzarella cheese Grated Parmesan cheese Saute beef and onion in large skillet. Drain off excess fat, stir in tomato sauce, spices and simmer uncovered for 10 minutes, stirring occasionally. Slice zucchini in rounds about 1/4 inch thick. Arrange half slices in lightly greased 9 x 13 inch pan. Beat cottage cheese with egg and spread over zucchini. Top with half the Mozzarella and half of meat sauce. Repeat with remaining and top with Parmesan. Bake at 350 degrees for 40 minutes. |
