ZUCCHINI LASAGNA 
1 lb. ground round
Garlic powder to taste
Salt & pepper to taste
1 can tomato paste (no salt)
4 med. tomatoes, chopped or 1 can whole tomatoes, chopped
Basil, oregano
3 eggs, beaten
2 zucchini, sliced & lightly steamed
1 lb. low-fat cottage cheese

Brown beef in pan. Season to taste with garlic powder, salt and pepper. Add tomato paste and tomatoes; season with basil and oregano. Let simmer over low heat about 45 minutes. If sauce becomes too thick, add water. Beat eggs well, add more salt, pepper and garlic powder. Combine eggs and cottage cheese, mixing well.

In 9 x 13 inch pan, make a layer of meat sauce, then zucchini, then cottage cheese and eggs; repeat layers, ending with a top layer of sauce. Bake in 350 degree oven for 1 hour. Let stand 10-15 minutes before serving. Makes 6 servings. Each serving = 1 1/2 protein, 2/3 cup cooked vegetables. Each serving = 298 calories.
