CURRIED SEAFOOD BAKE | |
1 c. elbow macaroni 1/4 c. sliced green onion 1/2 tsp. curry powder 3 tbsp. butter 3 tbsp. all-purpose flour 1/2 tsp. salt 1 3/4 c. milk 1 c. sour cream or yogurt 1 (5 oz.) can lobster or 1 (7 oz.) can crabmeat, drained and flaked 1 (4 1/2 oz.) can shrimp, drained 1/2 c. crushed rice round crackers 1 tbsp. butter, melted Cook macaroni according to package directions; drain. Cook onion and curry in 3 tablespoons butter until onion is tender. Stir in flour and salt. Add milk; cook and stir until thickened and bubbly. Remove from heat; stir in sour cream. Gently stir in macaroni and seafood. Turn into 2 quart casserole. Mix crumbs and melted butter; sprinkle atop. Bake at 350 degrees for about 30 minutes. Serves 4. My finicky kids love this!! |
