KATHY'S POTATO SALAD 
5 lb. potatoes, cooked, peeled & cut in bite-size pieces
1 bunch celery, chopped
1 sm. red onion, chopped
3-4 dill pickles, chopped
1 can olives, sliced
1 box frozen peas
1/2 lb. mild Cheddar cheese, chopped
6 hard boiled eggs, chopped
1 qt. mayonnaise
2 tbsp. mustard
Salt & pepper to taste

Mix together and chill. Serves 12-18.
