CHOW MEIN 
1/2 lb. diced pork
1 lb. diced veal
1/2 lb. diced beef or use same amts. of all boneless chicken
2 tbsp. shortening
6 tbsp. soy sauce
1 c. water
1 bunch celery, sliced
1 med. onion, chopped
2 tbsp. cornstarch
1/4 c. water
1 can water chestnuts
1 lb. can bean sprouts, drained
1 (4 oz.) can mushrooms
Salt & pepper

Brown meat in fat. Add soy sauce and 1 cup water. Simmer about 5 minutes. Add celery and onion and simmer 1 1/2 hours. Blend water and cornstarch and stir into meat mixture. Just before serving add water chestnuts, mushrooms and bean sprouts, heat well. Serve with rice or dry noodles.
