LADY FINGER MOUSSE CAKE | |
6 oz. chocolate chips 2 tbsp. sugar 3 tbsp. water 4 eggs, separated (save whites) 1 pt. whipping cream 1 pt. whipping cream for garnish 1 tsp. vanilla 3 pkgs. lady fingers (plain) Chocolate sprinkles (opt.) Melt chocolate, water, and sugar in double boiler; add egg yolks, one at a time and stir. Allow to cool. Beat egg whites until stiff and fold into chocolate mixture. Beat whipped cream and vanilla. Add chocolate mixture, stirring until blended. In spring form pan, line sides and bottom with lady fingers. Add 1/2 mixture and add another layer of fingers. Add rest of mixture. Refrigerate 3 hours. Garnish with pint of whipping cream and chocolate sprinkles. |
