FUNNEL CAKES 
6 c. oil
3 c. unsifted flour
1/2 c. sugar
1 tsp. baking powder
1/2 tsp. salt
3 eggs
2 c. milk
1 tsp. vanilla
Confectioners' sugar

Pour oil into electric deep fat fryer and preheat to 425 degrees (about 25 minutes). Sift flour, sugar, baking powder and salt together and set aside. Beat eggs until thick and lemon colored then add milk and vanilla and beat in sifted dry ingredients just until batter is fairly smooth.

Using a wide mouth funnel; cover opening with finger and pour 1/4 cup batter into the funnel. When ready to fry, release finger and run batter into hot oil using a slow, wide, circular motion.

Maintain a steady steam. Fry until golden brown, turning once. (About 1 to 1 1/2 minutes per side.) Drain on paper towel and sprinkle generously with confectioners' sugar. Best when served warm. Variation: Can top with fresh strawberries (sugar added) and ice cream.
