SUNNY LEMON CHEESECAKE SQUARES 
1 pkg. Pillsbury Plus lemon cake mix
1/2 c. butter, softened
1 (8 oz.) pkg. cream cheese, softened
1 (11 oz.) can mandarin oranges, well drained
2 eggs
2/3 c. coconut (optional)

Heat oven to 325 degrees. Lightly butter a 12 x 8 inch baking dish OR a 9 inch square baking dish. Reserve 1 cup of the dry cake mix.

Step 1: In large mixing bowl, combine the remaining cake mix and butter. Mix at low speed until crumbly. Divide crumb mixture into equal parts. Press 1/2 of mixture into baking dish to make a crust. Set aside.

Step 2: In same mixing bowl, combine reserved 1 cup dry cake mix, cream cheese, oranges and eggs. Blend at medium speed until well blended. Stir in coconut. Spread this mixture over crust. Sprinkle with the other 1/2 of crumb mixture (from Step 1).

Step 3: Bake at 325 degrees for 30-40 minutes, or until center is set. Cool completely. Refrigerate until serving time, and store leftovers in refrigerator.
