LEMON CAKE SQUARES | |
6 tbsp. butter 1 c. sugar 2 eggs, beaten 1 1/2 c. flour 1 1/2 tsp. baking powder 1/4 tsp. salt 1/2 c. milk Grated rind of 1 lemon Cream butter with sugar. Now mix in this order: 2 beaten eggs, 1 1/2 cups flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon salt and 1/2 cup milk and the grated lemon rind. Pour batter into a greased 13 x 9 x 2-inch baking pan. Bake 350 degrees for 25 minutes. Meanwhile, mix 2/3 cup sugar with the juice of 1 lemon. When cake has baked 25 minutes, carefully spoon lemon sugar mixture over the top of cake and bake 5 minutes more. Cut while still warm into 1-inch squares. Makes about 117 tea-sized cakes. |
