LEMON CHEESECAKE SQUARES 
1 pkg. lemon cake mix
1/2 c. butter, softened
8 oz. cream cheese, softened
1 (11 oz.) can mandarin oranges, drained
2 eggs
2/3 c. coconut

Heat oven to 325 degrees. Lightly greased 12 x 8 inch (2 quart) baking dish. Reserve 1 cup of the dry cake mix. In large bowl, combine remaining cake mix and butter at low speed until crumbly. Reserve 1 cup of crumb mixture. Press remaining crumbs mixture in bottom of baking dish.

In same bowl, combine reserved 1 cup cake mix, cream cheese, orange segments and eggs at medium speed until well blended. Stir in coconut. Spread over base. Sprinkle with reserved 1 cup crumb mixture. Bake at 325 degrees for 30-40 minutes or until center is set. Cool completely. Store in refrigerator. 16 servings.
